Make the most of the superb strawberries that are still in season!

Over the past couple of months, if you’ve been anywhere near a shopping centre, grocer or even your local produce markets, you’ve probably noticed the same wall of bright red that I have.  Everywhere I’ve looked, I’ve seen punnets of strawberries by the barrowful, the pallet tower and the truckload.

Strawberries this year have been beautiful quality and super cheap at the same time.  But you do need to do something with them pretty quickly – otherwise you end up with little red furry friends in a puddle of pink juice that has steadily seeped out of the strawberries!

Spend a few minutes doing something a little extra special with your strawberries.  Melt some white, milk or dark chocolate and dip the firmest, ripest strawberries you have into the chocolate, being careful not to dip the stems into the chocolate. If you’d like to further embellish, add your sprinkles (or cookies crumbs in our case) then set the strawberries onto a sheet of baking paper to dry completely.

Enjoy these as is or do as we did and decorate the top of a white chocolate cheese with a chocolate biscuit crumb base (secret secret YUM YUM)!

If you don’t think you’ll get through all your strawberries while they are fresh, get your freezer helping out. I like to top, chop, rinse and then freeze ziplock bags full of fruit pieces for later.  I then either use them straight out of the freezer in smoothies, baking or on top of muesli and yogurt or allow them to defrost and then use them as you would any other strawberries (although they may be a little more mushy and juicy once defrosted).

Go nice and simple with a traditional afternoon tea of SCONES (made with spelt flour), STRAWBERRIES & CREAM. Serve with hot tea, strong coffee or even a glass of champagne or dessert wine.

Nothing says a fruitfully fruitful strawberry season like a few big new jars of homemade strawberry jam.  This Strawberry Chia Jam goes one step further to introduce one of the most popular seeds around at the moment.

And who would think to throw a handful of strawberries in with some spinach and almond to make this lovely Summer Spinach, Strawberry & Almond Salad.  I think it looks quite Christmassy too (so perfect for a long lunch that you want to keep light).

Use your fresh or frozen strawberries and whip up a smoothie. Breakfast, snacks or anytime it’s a great way to pack in the fibre, vitamins and a pile of lovely flavour. For a breakfast smoothie for 2 people I use 1 cup strawberries (fresh or fresh then frozen), 1 cup milk (use Almond or Coconut milk for dairy free), 1 banana, 2 tbs dessicated or shredded coconut, 6 ice cubes, 4 tbs yoghurt (coconut yoghurt for dairy free) and 1 tbs rice malt syrup or stevia. Blitz, blitz, blitz and then enjoy!

Think beyond the super sweet and make a batch or three of your own FRUIT ROLL UPS. Super easy to make and (according to my kids) even better than the sugary sweet ones from the supermarket.

  • Good list of ideas, and good tip to freeze. Have yet to make my own jam, and this one looks easy and delicious.

  • When we have a glut of strawberries I blend them and then freeze them in ice cube trays and then store in zip lock bags in the freezer. They are great all year round in smoothies!

  • LOOOOVE strawberries.

    we make oodles of homemade jam, use them in smoothies but i love the idea for the homemade roll ups! i’ll be deff giving that one a try!

  • Alert: some get mouth ulcers from eating strawberries. I don’t know the reason why, whether it is the acid content or whether my little cousin is allergic to them but it’s the only time she has ever had mouth ulcers

  • I always rinse them before I chop them. I founbd if you chop them first then rinse you lose some of the natural juice out of the strawberry.
