The latest hummus taste craze is caulifower hummus; make some today, it’s easy to do and it tastes delicious.

What you’ll need:

  • 1 cauliflower
  • olive oil
  • salt/pepper
  • 1/4 cup tahini
  • 2 tbsp lemon juice
  • 1 tbsp honey
  • 1 garlic clove
  • 1 tbsp parsley
  • pinch cayenne pepper

Method:

  1. Preheat oven to 220 degrees
  2. Cut cauliflower head into florets, place on a baking tray and toss with olive oil. Season with salt and pepper. Bake for 20-25 minutes, until the cauliflower is tender.
  3. Combine cooled roasted cauliflower, tahini, lemon juice, honey and garlic in a food processor and process until almost smooth. Add salt and pepper to taste. Add a tablespoon of olive oil and process again until smooth. Continue adding olive, about a teaspoon at a time, until you reach the desired consistency.
  4. Place in a small bowl and sprinkle with cayenne pepper and parsley.
  5. Serve with fresh vegetables and pita breads.

This is really yummy and I think I like it better than chickpea hummus.

  • I never used to like hummus but now it has grown on me. The addition of cauliflower is interesting. My favourite dip is French onion.

  • Has anyone tried making this hommus yet? Is it better than the original? I might stick to chickpeas because cauliflower is really expensive where I am.

  • Sub the honey for xylitol and it could be a good LCHF version. Thank you :)

    • You can skip the honey (or substitutel) all together as the sweetness in this recipe isn’t really needed.

  • I much prefer the chickpea hummus especially if you are making it from scratch! Chickpeas are sold good for you and little kids too as they’re packed full of protein for growing bodies. This recipe seems great for those with allergies though and could be modified even!
