Shortbread is my favourite biscuit to make and eat at Christmas. This recipe turns out delicious every time and is easy to make.

Ingredients:

  • 100 grams white sugar (plus extra for sprinkling on)
  • 200 grams butter
  • 300 grams plain flour
  • 1 teaspoon vanilla extract

Method:

  1. Preheat oven to 160 degrees.
  2. Cut butter up in pieces and bring to room temperature.
  3. Add butter and sugar to a bowl and mix until pale and fluffy.
  4. Add vanilla extract.
  5. Sift flour into the bowl and mix in gently. Once combined, knead gently with your hands until you have a dough.
  6. Roll dough out to 5mms thick.
  7. Cut out shapes using cookie cutters and transfer to a lined baking tray.
  8. Place trays in the fridge for 20 minutes.
  9. Sprinkle biscuits with sugar.
  10. Bake in the oven for 15 minutes or until light brown.
  11. Transfer biscuits to a wire rack to cool.
  12. Eat or gift them!

  • I am running out of time for everything at the moment. My hubby’s favourite thing at Christmas time is shortbread. I’ve never made it, but this is tempting me and teasing me to do so in the little time I have left this week! Maybe I can get my teenage son onto it!!

  • I had never made shortbread before but baked a batch of your cookies today. Simple and delicious family loved them. I didn’t have any cookie cutters but a small shot glass worked. Thanks for sharing.

  • I love shortbreads too. Every year my daughter and I flip through different recipes till we find the ones we want to bake. There is so much choice. And it’s so entertaining to bake together! :-)
