I love using porterhouse in my steak tartare. This is a tender and delicious cut of beef. Although it can often be quite expensive depending on the week.
I have found these steaks to be real hit or miss. A lot of the time they are quite big but you have to cut so much gristle out it would of been easier just to have a smaller less gross steak.
