i always add more chilli to mine because I love a bit of heat in my dish but its up to you, as little or much as you like.


Ingredients (serves 2)

  • 500g green prawns, shelled with tails on
  • 1 packet of dried linguine
  • 1 red chilli
  • 1 Lemon
  • 1 cup White wine
  • 1 bunch/bag baby spinach
  • 2 cloves of garlic
  • 2tbs Olive oil
  • 1 avocado

Method

  1. Boil water and add linguine. Cook for 8 minutes or until packet instructions indicate.
  2. Rinse the prawns. Chop and deseed the chilli. Crush or finely chop the garlic. Rinse the baby spinach leaves.
  3. Heat oil in a wok or pan. Add chilli and finely chopped garlic. Cook for 1 minute. Add prawns and cook for 5 minutes tossing to ensure they are cooked on both sides. Add 1 cup white wine, avocado and baby spinach leaves.
  4. Once linguine is cooked drain and add to bowls. Top with prawns. Drizzle some olive oil and lemon over the top of the pasta and prawns. Top with Parmesan cheese. Serve and enjoy.

  • Yum defs add more chilli and even red onion for a crunch factor! Squirt with lime juice for a variation! Very clean and delicious flavours!
