A great pasta dish to use up leftover ham. It’s even more delicious when it’s baked in the oven.

Ingredients (serves 4)

  • 400g Pasta
  • 200g Ham (sliced thinly)
  • 1 tablespoon Olive Oil
  • 3 Eggs
  • 100ml Thickened Cream
  • 1/2 cup Parmesn
  • 1/3 cup Parsley

Method

  1. Cook pasta in large saucepan
  2. Meanwhile, heat the oil in a saucepan over medium heat and cook ham for 4-5 minutes (or until crisp).
  3. Mix eggs, cream and parmesan in a bowl.
  4. Drain pasta and return to pan, adding the ham, parsley and the egg mixture.
  5. Toss the ingredients and serve straight away.

  • Hmm I’m 14 weeks pregnant…if the ham is heated through a dish like this, I wonder if that’s safe or if I should avoid it altogether for now…it looks like such a delicious dish though! Maybe cooked bacon may be a good alternative :)

  • We love Carbonara in our house, it’s my teen son’s favourite. It is one of the more fattening pasta sauces to eat, so I use light cream and light ham. Still great flavour.

  • I tried this tonight! So yummy! And I tried the oven trick! Even won over my son! :) I sprinkled parmesan and cheddar on top before putting it in the oven :)
