A delicious change to ordinary banana muffins


Ingredients (makes 12 muffins)

  • 1 cup self-raising flour
  • 1/2 cup plain flour
  • 1/2 teas baking powder
  • 1/2 teas salt
  • 1/2 cup sugar
  • 3 bananas, mashed
  • 1/2 cup maple syrup
  • 1 egg, lightly beaten
  • 100g butter, melted
  • 1 tbs icing sugar

Method

  1. Preheat oven to 180°C/160°C fan-forced. Spray a 12-cup muffin tin with cooking spray and set aside.
  2. In a large bowl, combine the self-raising, plain flour, baking powder, salt and sugar
  3. In a jug, combine the bananas, maple syrup, egg and butter
  4. Pour the ingredients of the jug into the bowl and using a spatula; gently fold the mixture together until all ingredients are moist.
  5. Using an ice-cream scoop, scoop mixture into the muffin tray and bake for 20-25 minutes
  6. Cool on a wire rack

Notes

It is always important not to overwork a muffin mixture or your muffins won’t be light. Make sure that you use ripe bananas for the fullest flavour
