Simple healthy and gluten free. You can roll them up and fill with Nutella, yoghurt, peanut butter or fruit.


Ingredients (serves 2 | makes 4-6 pancakes)

  • 1 banana
  • 2 eggs
  • coconut oil

Method

  1. Mash the banana until smooth.
  2. Mix with eggs.
  3. Heat the frying pan with a bit of coconut oil then place some mixture in then wait a minute then flip over to cook other side.

  • Definitely flour free, great for gluten intolerant. Maybe more banana pancakes tho. Not sure about these

  • I have tried similar to this and it tastes great specially with a dollop of natural yoghurt on the pancake. Haven’t tried using coconut oil. Thanks.

  • I have a relative who has coelic disease so this would be ideal. Nor risk of me poisoning anybody using the wrong flour. Giving a person with coelic disease food with “ordinary” flour containing wheat, rye or barley. If any coelic meals come into contact with non-coelic safe food it means it is cross contiminated AND is equivalent to poisoning to poisoning and can make them extremely ill for a few days, not just hours.
