Lovely chicken pasta in pink sauce with avocado and mushrooms


Ingredients (serves 4)

  • 500gr Thinely sliced chicken breast or chicken tights
  • 200gr Sliced mushrooms
  • 1 Tin of diced tomatoes
  • 300 ml Cream
  • 2 Ripe "diced" avocado
  • 2 Tbsp Olive oil
  • 1 tsp Sugar
  • Salt and pepper
  • Spaghetti for 4

Method

  1. Heat the water for your pasta in a large pan. Heat the olive oil in a deep pan and add the chicken. Once the chicken is "sealed" add the mushrooms and cook for a couple of minutes.
  2. Add the tomatoes, creamand sugar. Bring it to boil add the avocado and reduce the heat to simmer.
  3. Simmer until your pasta us cooked and season with salt and pepper to taste.

  • I’m not sure about this one, kinda looks like baby poop :/ And there’s not much in the ingredients list that look like it will make this tastey

  • Oh wow. This looks a bit like a Milanese type sauce (at least the version of it I’m used to). Will have to try it with my ravioli…

      • Yes, delicious for example also with pasta, instead of the usual pesto sauce.
