This fantastic skewered burgers with vegetables on warm fresh herb and freekah salad is ideal for entertaining.

Serves 4.

Ingredients

  • Wooden skewers
  • 2 Roast Pumpkin and Chickpea Burger (Roast Carrot, Kale & Chickpea burger also suitable)
  • 1/4 punnet cherry tomatoes
  • 1 zuchinni (baby/ small)
  • 1 cup button mushrooms
  • 1/2 packet freekah
  • 1 cup of each parsley and fresh herbs in season (thyme, tarragon, basil, mint)
  • 1 spanish onion
  • 1tsp mixed spice
  • 250 grams yoghurt
  • 1/2 cup coriander

Instructions

Cook freekah to packet instructions.

Dress freekah with olive oil, season sea salt, cracked pepe,  lemon juice & mixed spice.

Chop parsley, thyme, taragon, basil & mint and stir through freekah salad
.

Brush skewers with oil for grilling (infuse oil with garlic as an option).

Finely chop coriander and add to natural yoghurt for drizzling over the vegie skewer.

*All veg to be cut the same size to be threaded on the skewers for grilling

  • I’ve never cooked with freekah. Could I use couscous instead, as I’ve used that and know what I’m doing with it.
