The MoM team are always looking for new treats to bake for the kids and this Banana, Carrot and Oat Muffin Recipe is a winner all round. Great as a breakfast snack for mum or a lunch box surprise for the kids. Make them yourself with this amazing recipe…

Ingredients:
2 cups self-raising flour
1 cup oats
2 eggs
2 bananas, mashed
1 large (or 2 small) carrots, grated
2 teaspoons cinnamon
1/3 cup raw sugar
1 tablespoon honey or golden syrup
½ cup reduced fat milk
2 tablespoons olive oil (light in flavour)

Method:
Pre-heat and oven to 180 degrees and line muffin trays with patty cases (or grease lightly with spray oil).
In a large mixing bowl combine flour, oats, cinnamon and sugar.
In a smaller mixing bowl, whisk together eggs, milk oil and honey until well combined.
Fold egg and milk mixture through flour.
Add mashed banana and grated carrot and stir through
Spoon mixture into patty cases and place in pre-heated oven for 20 – 30 mins (time wil vary depending on size of the muffins)

  • Has anyone actually tried these with their kids? Im thinking my kids will smell the health in this and avoind them. I baken regular carrot cake last week and all they ate was the icing.

  • this is a good recipe especially for kid’s lunchboxes or snacks. this is easy to make and it looks like it will have a lot of flavour going by the ingredients

  • These look really nice and healthy. We dont have raw sugar at home. Does anyone know if I can use an alternative. Has anyone tried brown or caster sugar or just regular white sugar?
