A super savvy mother-of-two shared a snap of her freezer and all the chopped vegetables in zip-lock bags, writing ‘Veg prep for what feels like the next year lol’.

Included in the selection was 15 kilograms of carrot, 20 kilograms of potatoes, 15 kilograms of sweet potatoes and more, shares Daily Mail.

She wrote in a Facebook post: ’15kg of carrot: sliced, roast chunks and chopped.

’20kg of Sebago potatoes: roast chunks, sliced for potato baked and diced for mash.

’15kg of sweet potato: roast chunks, sliced for potato bake and diced for mash.

’10kg of onion: sliced, chopped and chunks for roast, onion rings.
‘2kg of zucchini: julienne and roast chunks.’

Her freezer also included one kilo of capsicum, sliced, two pumpkins in chunks and 10 kilograms of tomatoes, which she had diced.

The woman said she bought the vegetables wholesale for a total of $80.

The mum said the reason why she did it is because she currently has ‘six adults and two kids’ living under one roof.

‘I do it so I don’t have to waste time every night chopping up veg for dinner, as we all work and I have uni and the two kids have after school sports,’ she said.

‘None of this is pre-cooked and the roast vegetables turn out great,’ the woman replied.

‘Just need to thaw out properly so I take it all out the night before. Diced up carrot and onion and that type of stuff is for slow cooker and spaghetti etc.’

I am certainly not that organised!  I must admit I do prefer my vegetables fresh. Not sure why, but it feels healthier lol (silly I know!)

  • Fresh is great when you can – but she also is using fresh. In awe of her commitment and organisation.

  • Wow! Truly inspiring!

  • That’s commitment. I feel like it would take me an entire weekend to do that kind of prep and a freezer specifically for frozen veggies!

  • I wonder if she uses the whole frozen packet or part of it, and how she thaws only part. I guess it pours out easily enough and isn’t frozen in one solid lump?

  • $80 for all that! Wow, bargain. You would need a huge freezer or even two freezers to be able to freeze all that. It would take up heaps if space

  • Good on her I’m sure it saves a lot of time and money.

  • Looks and sounds very organised. Not bad for $80 worth of vegetables.

  • She must have a large freezer !

  • Holy moly. I wonder how long they actually keep for. If it works for her good for her!

  • I can’t imagine chopping up that much in one go, that sounds like a lot of work. I see how she saved time though, a clever decision on her part. :)

  • Some vegetables are supposed to be blanched before being packed in airtight containers and frozen. Some vegetables stay in good condition for longer than others. If you have a separate freezer – not the one with the fridge – hopefully it has a booklet stating what is suitable, how it should be prepared and how long you can store it before it starts to deteriorate. Some fruit can also be stewed and frozen in airtight containers.

  • They will get ice crystals and freezer burn. Plus they won’t taste the same

  • Zucchini doesn’t freeze very well, in my experience.
