This is not authentic kimchi. True kimchi (a staple in every Korean home) is made with cabbage and/or other vegetables that undergo a salting process to kill off bad bacteria and assist in fermentation. Its a similar process like Sauerkraut except way more flavourful as it has a blended spice paste of ginger, hot pepper paste, garlic and onions etc. The fermentation allows it to be tangy. This Obap ‘kimchi’ is more of a pickled kimchi flavored vegetable. Sorry but lets give proper respect to the to cultural foods. Its cabbage in a vinegar pickle brine and contains unorthodox ingredients such as miso/soy bean and sesame oil. It’s not bad, i used it in a kimchi hotpot as i did not have access to real kimchi. Its very sweet, Crunchy with a pleasant taste but not sour like real kimchi maybe a little tangy like a mustard and not very spicy maybe mild to medium in the spice department. Its ok to cook with but i would not recommend as a side dish like real kimchi. Either make your own kimchi (maangchi website is great) because real kimchi is a good bacteria laden probiotic, or if you can’t be bothered buy real kimchi from a korean or asian grocer. I’d only recommend using this kimchi for cooking as it lacks the depth of flavour found in real kimchi (that tart and addicting sharp notes) as well as that savoury (umami) taste.
I love love love kimchi and this is no exception. Can be a bit on the spicy side if you have never tried kimchi before and are not used to spicy products so I would suggest mixing with something to dilute the taste. Is a bit pricey for the amount you get.
