I’ve bought theses sausages over the years, I’ve always ended up with the same results.
i don’t find them too fatty, sausages need fat.
I woodfire roast in castiron in combustion stove, have tried MANY methods, cold / warmed / heated pan,.
Only on ash bed, a few hot coals, no coals ….
I think it’s the (sheep) skins, maybe too thick and cease up.
I’m going to try poaching them in a Tomato & veg ratatouille.
If that fails take skin off.
I’ve been buying Cleavers products for some time now but tried these honey beef chipolata’s on the weekend. I found them extremely fatty with the flavour overridden by the taste of the fat. I used paper towels to pat off as much fat as I could but still found them greasy. The sausage itself was quite tough. Not sure if I got a dodgy batch but I won’t be trying these again.
I try and buy my family the best quality meat, fruit and veg I can get my hands on and we just love cleavers products. These chiplolatas are a staple in our home and are perfect paired with a salad! YUM!
