An easy recipe for the kids to make.


Ingredients (makes 1 Loaf)

  • 1 cup Self Raising Flour
  • 1 cup Brown Sugar
  • 1 cup Desiccated Coconut
  • 1 cup Milk
  • 1 cup Flavour eg Sultanas, Dried Fruit, Choc Chips

Method

  1. Preheat oven to 180 degrees. Line a loaf tin with baking paper.
  2. Mix ingredients together in a bowl. Pour into loaf tin.
  3. Bake in the oven for approximately 45 minutes. Cool in tin.

Notes... My favourite flavour is a combination of sultanas, apricots and choc chips to make 1 cup.

  • Love this and with the flavour can use math for combining them. Could make this in so many ways.


    • Will in future use a lot less choc chips as it was too over powering. Might had been because they were 70% chocolate but that is what we have as less sugar, also I only used 1/2 cup of sugar. That one we used oats in it.
      Another one with sultanas used stevia , coconuts and it was ok.

  • I wonder how well this would go with gluten free flour? Gap anyone tried?


    • I am thinking you may not need quite as much flour as GF tends to be dryer than “normal” ingredients others use. I need to try Gluten Free too. I hope somebody who uses GF recipes all the time gives us good sound advice as I would like to make some for a relative who has Coelic Disease next time I stay there.
