A lovely tribute for Anzac Day. No nuts so you could pop one of these into lunchboxes for a sweet treat.


Ingredients (serves 12 | makes 24 balls)

  • 500g Cream Cheese
  • 4 tbs Golden Syrup
  • 1 tbs Lemon Juice (optional if you don't like anything too sweet)
  • 4 tbs Shredded Coconut
  • 8-10 Anzac Cookies

Method

  1. If you have a food processor, blitz the Anzac cookies and 2 tbs of coconut until they resemble bread crumbs. Pour into a flatish bowl (you'll be rolling the balls in this mixture so you just need a bowl that allows you to get your fingers in easily).
  2. Combine all remaining ingredients in a mixing bowl or your food processor.
  3. Mix or whiz until all ingredients are well combined.
  4. Roll the cream cheese mixture into bite-sized balls then coat in the Anzac cookie crumb.
  5. Refrigerate for a couple of hours before serving (or freeze for one hour). Store in refrigerator.

Notes

A lovely way to get the kids involved on Anzac Day. But yummy anytime!

    Will definitely have to make this for hubby to try as he loves Anzac biscuits as he was in the army.

  • Anzac…. Cookies???? There is nothing more Australian than Anzac biscuits, right? We don’t even have cookies in Australia. But more and more people are using the term. Why?


    • Because we all know what it means and we have people from many different nations living here now. Its one of those things that if you want to call them Biscuits then call them Biscuits and if you want to call them Cookies then call them Cookies. Its like some people refer to their offspring as Kids and others as children but we all know what it means. A friend of mine refuses to call her offspring Kids as those are baby goats and not children. Each to their own.
