A nice little cake to have for afternoon tea with some coffee/tea.


Ingredients (serves 8)

  • 190g Margarine
  • 200g Sugar
  • 100g Sunflower seed meal
  • 190g Flour
  • 3/4 tspn Baking powder
  • 2 Eggs
  • 2 Apples (peeled, cored and cut into eights)
  • 80g Maple syrup
  • Cinnamon

Method

  1. Mix the margarine and sugar together then add eggs and mix well. Add the flour, baking powder and sunflower seed meal, mix until it's creamy. Fold through maple syrup.
  2. Grease the base and sides of the inner pot of the slow cooker, pour mixture in and smooth the top so it is level. Place the apples on too, pushing them into the mixture. Sprinkle all over with cinnamon.
  3. Press the BAKE button on the Philips All-In-One Cooker, set cooking time for 50 minutes and press start. Close the lid.

Notes

You can replace sunflower seed meal with almond meal - I didn't use almond meal due to my boys nut allergy. Hazelnuts or walnuts can be added and pushed into mixture when putting apples in.

  • Can you get sunflower seed meal at Coles or Woolies or do you need to get it at a health food shop?


    • It’s easy to make at home. Simply grind raw (or soaked and dehydrated) sunflower seeds in a food processor, coffee/spice grinder, or high-performance blender such as a Vitamix. Pulse until the sunflower seeds have a flour-like consistency and avoid over-grinding, or you may end up with sunflower seed butter. Periodically sift the flour through a flour sifter or fine-mesh strainer and repeat until all the seeds are finely ground. One cup of sunflower seeds makes about one cup of flour.
