Ingredients (makes 15 Muffins)

  • 1 1/2 cups Self raising flour
  • 1/2 cup Caster sugar
  • 1/2 teaspoon Cinnamon
  • 180ml Vanilla yoghurt (1 child sized tub)
  • 1 Egg
  • 1/2 cup Vegetable oil
  • 2 Medium apples, cored, peeled and diced

Method

  1. Pre heat oven to 180c (160c fan forced) Line muffin tin.
  2. Beat all wet ingredients in a bowl. Mix in dry ingredients. Fold in diced apple.
  3. Spoon into muffin cases. Bake for 20 minutes.


  • These are lovely. I do make these at home, and they’re a huge hit.

  • Good recipe! Has anyone tried to substitute the sugar with honey before? I’m not too keen with using Stevia, Agave, etc.


    • Maybe try using apple sauce as the sweetner?

  • Love that this recipe only has 1/2 cup of caster sugar as we’re trying to reduce sugar, but the kids still want yummy things to eat. I’ll try these. They look great.
