A delicious easy to make cheesescake that is sure to impress


Ingredients (serves 12)

  • 2 cups biscuit crumbs (yo yo, scotch finger or Marie)
  • 125 grams Butter
  • 3 x 250 gram packets cream cheese
  • 1 teaspoon vanilla essence
  • 1 desert spoon lemon juice
  • 2 eggs
  • pinch salt

Method

  1. BASE Crush biscuits and add melted butter. Press into base of 22cm greased springform tin
  2. FILLING Beat cream cheese, gradually add sugar,lemon,vanilla,salt, eggs and salt.... Beating constantly
  3. Pour filling onto base Bake in a slow oven (130-140 degrees) 45 minutes
  4. Leave in oven to cool

Notes... My Mother in laws recipe that never fails . Can be topped with berries, mango or anything in season. I have also added berries to the mixture before baking

    In step 2 of the method it says to add sugar to the cream cheese however, there is no sugar listed in the ingredients..
