A quick and easy dessert that my kids love.


Ingredients (serves 4)

  • 1 banana (mashed)
  • 2 eggs
  • 2.5 cups milk
  • 1/2 tablespoon vanilla
  • 1/4 cup cornflour
  • 1/4 cup sugar (or less if you want it less sweet)

Method

  1. In a bowl, mash the banana with a fork and set aside.
  2. In a pan, whisk the eggs, milk, vanilla and cornflour together and place over medium heat. Bring to a boil, whisking continuously. Once at a boil, reduce heat and simmer for 2 minutes. Then whisk in the sugar and remove from heat.
  3. Place the banana in the custard pan and mix through to combine. If you want it smooth, you can blitz it (carefully as it will be hot). Serve

Notes

You can top with a sprinkle of cinnamon but I tend to serve with a scoop of LSA (linseed, sunflower seeds and almonds ground down).

  • This looks yummy but you could probably just take out the sugar and the custard would be sweet enough for a toddler from the banana sweetness. Im sure all little kids would love this.

  • For a baby or toddler if I added cinnamon I would only put in on part of the custard the first couple of times to see if your little ones likes. You don’t want your little one to dislike your custard and refuse it eat it without cinnamon. I think I would vary the fruit first.

  • This looks a great recipe. I think I’d not use the sugar, or if needed then sweeten with a tad of honey or rice malt syrup. Especially if using for bub or young kids. But love the twist on traditional custard. Banana custard looks great.
