Banana delicious is a yummy change to the usual lemon delicious and it is a popular dessert in our home.


Ingredients (serves 6)

  • 4 Bananas
  • 1 Tablespoon Lemon Juice
  • 2 Eggs
  • 2 Tablespoons Caster Sugar
  • 1 Cup Desiccated Coconut
  • 2 Tablespoons Apricot Jam
  • Ice-Cream (to serve)

Method

  1. Slice bananas and place in an ovenproof dish.
  2. Sprinkle lemon juice over the bananas.
  3. Place eggs and sugar in a bowl and beat them until creamy.
  4. Stir in coconut and jam and mix it well.
  5. Pour the mixture over the bananas.
  6. Bake in an oven at 180 degrees for 25 minutes.
  7. Serve with ice-cream.

Notes

Dust the banana delicious with icing sugar (if desired). Serve with ice-cream or double cream.

  • Can you substitute the coconut for something else? My toddler isn’t really a fan of coconut and we always have so many leftover bananas that go to waste.
