These banana pancakes are a great way to use up over ripe bananas. I also like using the chia seeds as they give the pancakes a bit of texture – they feel a bit like poppyseeds, plus with all the nutritional benefits of omega 3, fibre and protein.


Ingredients (serves 4)

  • 1 cup self raising flour
  • 1 cup milk
  • 1 egg
  • 1 tsp vanilla
  • 1 banana, mashed
  • 2 tablespoons chia seeds

Method

  1. Heat frypan on medium heat. Grease with butter or oil.
  2. Whisk milk, egg, vanilla and banana in a bowl. Gradually add SR flour and chia seeds until combined.
  3. Placed heaped spoonfuls on the frypan and flip until browned on both sides.
  4. Serve with butter and maple syrup or whatever topping you prefer.

  • I often do just banana, egg and chiaseeds for pancakes ( so no flour and no milk), they taste delicious !
