This is an all natural instant ice cream without any dairy or sugar involved.


Ingredients (serves 4)

  • 2 medium almost ripe bananas, cut in small chunks
  • 6 Dates, pitted
  • 1/4 cup Soy milk

Method

  1. Put the cut banana in a zip lock bag, place in the freezer for 1 hour or so. (This can be repeated any time and leave in the freezer for future use)
  2. Take banana out of the bag, place into the food processor, with dates and soy milk.
  3. Wizz them up for about 30 seconds or longer to get the consistency you prefer. Scoop out and enjoy!

Notes

I make this whenever the little ones are craving ice cream, they don't know this is actually NOT ice cream and they love it.

  • Thank you. My boy is Anaphylactic to dairy and I’ve been trying to get him to eat coconut milk and fresh mango homemade ice cream with no luck.
    I’ll give this a go and I think he’d much prefer the banana flavour and the sweetness of the dates.

  • Now this is what I like to see, no dairy OR sugar! I wonder if I could use almond milk rather than soy. I much prefer the taste of almond..

    • I do something similar. Except I have never measured any of the ingredients. I just put frozen bananas in my blender and then add a liquid until the mixture becomes the consistency of ice cream. I don’t normally use the dates as the bananas are normally plenty sweet enough for me. For the liquid bit, you could use yoghurt, milk of any type (fat free, full fat, skim, rice, almond ….. I prefer coconut milk, yummilicious) or even some fruit juices maybe.

  • I love bananas and have always wanted to make icecream so sounds like a good one to try.


    • Please try – it’s so easy you don’t even need an ice cream machine, just the good old fashion food processor will do.

    • You could give it a go – although frozen banana has that creamy quality to beat the ice cream that’s basically what we try to avoid (cream, egg and milk).
