such an easy, versatile recipe and can be healthy if you like, depending on your toppings


Ingredients (serves 4)

  • 1 leftover roast chicken
  • 1 capsicum
  • 1 onion
  • Handful mushrooms
  • Handful pineapple
  • Handful olives
  • Handful cherry tomatoes
  • Grated cheese
  • Barbecue sauce
  • 250mls water
  • 1 Tbsp olive oil
  • 2 tsps salt
  • 3 tsps sugar
  • 500 Gm bread flour
  • 3 tsps active dry yeast

Method

  1. Mix water, olive oil,salt, sugar, bread flour and yeast in bread maker. Let it do its thing.
  2. Roll out dough. Place on toppings of choice, chopped as chunky or small as you like. Add or omit any toppings.
  3. Cook in oven at 200*C for 15-20 minutes

  • Pizza is awesome. Excellent cold the next day for breakfast also :)

  • I love that a recipe for the pizza dough has been included. Never thought of using left over roast chicken as a topping for pizza. Definitely one for the recipe book
