So quick and easy – a great alternative to boring everyday porridge… Tastes more like a dessert but is completely healthy & full of nourishing ingredients. This recipe can be easily doubled & baked in a larger dish


Ingredients (serves 2)

  • 1/2 cup Quick rolled oats
  • 3/4 cup Milk or Soy Milk
  • 1/2 cup Frozen berries (blueberries, raspberries, blackberries, strawberries
  • 1/2 cup yoghurt (plain)
  • 1/4 cup Mixed nuts /seeds (Walnut, almonds, sunflower, pepitas, pecans, ect)
  • 1 tbsp Brown Sugar
  • 1/2 Apple peeled & sliced thinly

Method

  1. Combine oats & milk and cook briefly in microwave (1minute, high setting). Scatter frozen berries on the bottom of small baking dish. Pour warm porridge mixture over top. Dollop spoonfuls of Yoghurt on top of porridge. Top with sliced apple, mixed nuts /seeds, sprinkle with brown sugar. Bake at 170 degrees for 16 mins till top is turning golden. Remove from oven & enjoy!
