A creamy pasta with loads of flavor


Ingredients (serves 3)

  • PESTO
  • 20 grams Basil
  • 20 grams parmesan cheese
  • 20 grams Pine nuts
  • 1 small clove garlic,crushed
  • 50 grams olive oil
  • black pepper and salt
  • PASTA SAUCE
  • 250 Grams pasta
  • 100 grams smoky bacon
  • 125 grams halloumi cheese
  • 100 ml cream

Method

  1. PESTO.......Combine basil,grated parmesan,pine nuts and garlic in a food processor (or magic bullet/ /mortar and pestle ) Mix until roughly chopped
  2. Add the olive oil and mix to a paste .. It's up to you how Chunky or smooth you want it. . Season to taste with pepper and salt
  3. For the pasta ....Shred the bacon and cut the halloumi into smaller bits. Fry the cheese and bacon on a med. heat until lightly colored and crisp.
  4. Lower the temp. and add the cream and pesto . Toss in the cooked pasta and season to taste . ( sundried tomatoes can be added if desired )

Notes

My 11 Year old Grandson taught me this one ! Very easy but so so yummy !

  • I notice the recipe says smoky bacon. Most of the bacon is smoked. It is difficult to find bacon that isn’t smoked. the only one I have found is English Style bacon
