A quick, easy and delicious brandy butter. Use rum instead of brandy if you prefer the taste.

Ingredients (makes 1 cup)

  • 250 grams Softened Unsalted butter
  • 1 1/2 cups (185g) Sifted Icing Sugar
  • 1 1/4 cups (60ml) Brandy

Method

  1. Use an electric beater to beat the unsalted butter and icing sugar until smooth and creamy.
  2. Gradually add the brandy, beating thoroughly.
  3. Refrigerate until required.
  4. Makes about 1 cup (250ml).

  • Now I know how it is done. A colleague who retired a few years back used to make this with muffins. I’m not a fan of alcoholic desserts so I’ve never made it but a close friend (also a colleague) has been after a recipe for it for a loooooong time. Apparently my nonalcoholic buttercream frosting on my cupcakes just isn’t the same as Brandy Butter.;) I’ll be sharing this with my friend and I know it’ll make her very happy. :) Thanks for sharing.
