Ingredients (serves 4)

  • 2 cups Broccoli florets
  • 1 Onion, sliced
  • 1/2 tsp Dried basil
  • 1/2 tsp Dried oregano
  • 1/2 tsp Dried thyme
  • 400 grams Diced tomatoes
  • 3/4 cup Beef stock
  • 500 gram Beef mince
  • 2 tsp Garlic, minced
  • 2 Tbsp Tomato paste
  • 1 cup Pasta
  • 1/2 - 1 cup Cheese, grated
  • 1 Tbsp Oil

Method

  1. Preheat oven to 180 degrees. Cook pasta as per cooking instructions. Add broccoli to pasta for the last 3-4 minutes of cooking time.
  2. Heat oil in pan. Combine mince, onion and garlic until cooked. Add herbs, diced tomatoes, stock, tomato paste, broccoli and pasta. Mix thoroughly.
  3. Pour mixture into baking dish. Cover with cheese and bake for approximately 30 minutes until mixture is heated through.

Notes

You can skip baking the mixture and serve straight from the pan. I find by baking however, the flavours combine nicely together. This meal can also be slow cooked. Put everything into the slow cooker, adding pasta and cheese for the last 30 minutes. Takes about 4-5 hours on low.

  • I wouldn’t have thought of combining beef and broccoli in a recipe as they both have strong flavours. Kids call bitter broccoli bushes. Just as well there is other ingredients to reduce the flavour of them. Maybe I’ll use cauliflower instead
