This caramel popcorn is easy to make and delicious!

Ingredients (serves 6 | makes 8 cups of popcorn)

  • 8 cups popped popcorn
  • 1/2 cup honey
  • 1/2 cup peanut butter (we used crunchy)
  • 3 Tbsp butter
  • 1 tsp vanilla

Method

  1. Boil honey in a small saucepan for 5 minutes.
  2. Stir in the peanut butter and butter until melted.
  3. Add the vanilla and stir.
  4. Pour over popped corn and stir.

Notes... You can cut the recipe in half if you like as this recipe makes a large amount.

  • Fond memories of eating toffee popcorn that my sister made when we were young. But I didn’t think of using peanut butter – a great idea!

  • Personally I don’t like to heat honey as it’s an unhealthy practice. We make this unsweetened with just ghee butter, peanut butter, vanilla and hymalian sea salt.

  • Well, this reminds me of Lolly Gobble Bliss Bombs. We don’t have popcorn in our home now as my son wears braces and this is a big no no. We don’t want to torment him.

  • Instead of honey I would use coconut pal syrup or yacon syrup as honey should not be heated. Heated honey is stripped from all it’s nutrients.
