Quick, easy and tasty. Also works to substitute the chicken for pumpkin and make it vegetarian.
Ingredients (serves 6 | makes 12 triangles )
- 250g Chicken breast
- 250g Mushrooms
- 250g Cream cheese
- 2Tbsp Garlic
- 2Tbsp Chives
- 3 Sheets of Puff Pastry
- 1 packet Coleslaw
- 1/3-1/2 cup Aioli
- 1 Egg
Method
- Cut chicken in to 2cm pieces. Slice mushrooms. Cook chicken in frypan until golden. Add mushrooms and garlic cook until mushrooms are tender. Preheat oven to 180 degrees.
- Place puff pastry plastic side down on bench to defrost. Cut each sheet in to 4 squares. Place cream cheese and chives in a large bowl stir to combine to a smooth consistency. Add the chicken and mushroom mixture and combine. Add salt and pepper to taste.
- Place 1-2 tablespoons of mixture in each triangle. Fold over and press edges together to seal it close. Crack the egg in to a cup. Beat with a fork and use a pastry brush to brush over each triangle. Bake in an oven for 25 minutes.
- Place coleslaw and aioli in a bowl. Stir to combine. Serve the triangles with coleslaw on the side.
