This Chicken Cacciatore is easy as well as being a delicious and hearty family meal.

Ingredients (serves 4)

  • 2 Tablespoons olive oil
  • 12 chicken drumsticks
  • 1 brown onion, sliced
  • 3 garlic cloves
  • 1/2 cup white wine
  • 1/3 cup chicken stock
  • 425g tin diced tomatoes
  • 2 Tablespoons tomato paste
  • 1 teaspoon caster sugar
  • 1/3 cup black olives
  • 1 salt & pepper to taste

Method

  1. Brown chicken drumsticks, garlic and onion in olive oil in pressure cooker pot.
  2. Add wine, stock, tomatoes, tomato paste, sugar, olives and salt & pepper.
  3. Pressure cook for 15 minutes.
  4. Serve with rice.

Notes... I made this in the Philips All-In-One Cooker that made a beautifully thick sauce with great flavour.
