These chicken kefta patties are a great light dinner or a great lunchbox treat!


Ingredients (makes 20 Mini patties)

  • 1 kg Chicken mince
  • 1/2 onion, grated
  • 1/4 red capsicum, grated
  • 1/4 cup Fresh parsley chopped, finely
  • 1/4 cup Fresh coriander chopped, finely
  • 1 tsp Salt
  • 1/4 tsp Black pepper
  • 1 tsp Garlic, minced
  • 1/2 tsp Ground ginger

Method

  1. Place all ingredients in a large bowl and mix well to combine.
  2. Shape into mini burger patties.
  3. Cook in a non stick fry pan for 3-4 minutes each side or on a BBQ. Serve with hummus, salad and flat bread.

Notes

You can add the onion and capsicum to a food processor instead of grating.

  • I think hubby would enjoy this as he loves all of the ingredients on the list!

  • Love all the ingredients in this! I mainly use, lamb or beef mince, when making patties..so chicken will be a nice change!

  • This sounds good! Looks like a good lunch idea for the kids… however I’m not too sure about the capsicum… any suggestions as to what I could replace it with? (I might try corn…)
