Ribs to die for.
Ingredients (serves 4)
- 800gms Pork Spare Ribs
- 3 Tbsp Hoisin Sauce
- 2 Tbsp Soy Sauce
- 2 strips Orange Rind
- 1 1/2 Tbsp Honey
- 2 Tsp Sesame Oil
- 1 Tsp Tabasco sauce
- 2 Tsp Minced Ginger
- 2 Cloves Minced Garlic
- 2 Tbsp Oil
- 2 Cups Water
- Salt & Pepper to taste
- Spring Onion to garnish
- Peanuts to garnish
Method
- Cut the pork ribs to pieces and blanch with boiling water for about 3 minutes (this is to remove impurities and blood). Drain well and wipe dry with tea towel. Season with salt and pepper all over.
- Heat oil in frying pan and cook ribs over medium-high heat until lightly brown.
- Add ginger and garlic and saute.
- Pour sauce and water over ribs and bring to a boil.
- Reduce heat to low and simmer for 3 hours or until ribs are softened and sauce reduced to 1/5 and thickened. Add water if sauce begins to dry out during simmering as ribs are not soft yet.
- Garnish with spring onion cut diagonally and peanuts.
- Serve hot with rice.
