A sweet treat that everyone will enjoy


Ingredients (makes 16 Bars)

  • 125g Butter
  • 1/2 Cup Brown Sugar
  • 1 Cup Coconut
  • 1/2 Cup Plain Flour
  • 1/3 Cup Self-raising Flour
  • 1 Tbsp Cocoa
  • 1 Egg
  • 1 Cup Icing Sugar
  • 1 Tbsp Cocoa
  • 1 Tsp Soft Butter
  • 1 Tbsp Milk (approximate measurement)

Method

  1. Melt butter over low heat, stir in sugar, coconut, sifted flours and cocoa, then lightly beaten egg. Spread mixture evenly over base of well greased lamington tin (28cm x 18cm)
  2. Bake in a preheated 180•C oven for 20 minutes, or until just firm to touch.
  3. Meanwhile, sift icing sugar and cocoa into bowl, stir in butter and enough milk to give a thick paste.
  4. Once the base is ready, spread with icing immediately, stand for 10 minutes, then sprinkle with a little extra coconut. Cut into bars and cool in tin.

  • I have been making these for my kids since my eldest was two. He turns 30 in a few months. It is the exact same receipe. Oh and my youngest is 14 and still loves them along with my grandbabies.

  • Awww take me back. This used to be one of my husband’s favourite treats. His Nana shared her recipe with me and I used to make them regularly. I have not made these in tens of years. A nice reminder.
