A sweet treat that everyone will enjoy


Ingredients (makes 16 Bars)

  • 125g Butter
  • 1/2 Cup Brown Sugar
  • 1 Cup Coconut
  • 1/2 Cup Plain Flour
  • 1/3 Cup Self-raising Flour
  • 1 Tbsp Cocoa
  • 1 Egg
  • 1 Cup Icing Sugar
  • 1 Tbsp Cocoa
  • 1 Tsp Soft Butter
  • 1 Tbsp Milk (approximate measurement)

Method

  1. Melt butter over low heat, stir in sugar, coconut, sifted flours and cocoa, then lightly beaten egg. Spread mixture evenly over base of well greased lamington tin (28cm x 18cm)
  2. Bake in a preheated 180•C oven for 20 minutes, or until just firm to touch.
  3. Meanwhile, sift icing sugar and cocoa into bowl, stir in butter and enough milk to give a thick paste.
  4. Once the base is ready, spread with icing immediately, stand for 10 minutes, then sprinkle with a little extra coconut. Cut into bars and cool in tin.
