Ingredients (serves 10 | makes 10 )

  • 4 Eggs
  • 1cup Sugar
  • 1cup Flour
  • 1tsp Baking powder
  • 1tsp Vanilla sugar
  • 3tbls Cocoa
  • 4tbls Water
  • 2cup Milk
  • 4tbls Flour
  • 1/3 cup Sugar
  • 2tbls Corn flour
  • 1tsp Vanilla essence
  • 1 Egg yolk
  • 1 cup Coconut
  • 1/2 cup Chocolate sauce or Nutella

Method

  1. Preheat the oven to 170 degrees celsius. Grease and line a lamination pan. 30x19cm.
  2. Using an electric mixer beat the 4 eggs and 1cup sugar on low until sugar has dissolved. Add the remaining ingredients (1 cup flour, baking powder, vanilla sugar, cocoa and water) beat for another 2 minutes. Spread the mixture into the pan and level the top. Bake until a skewer inserted into centre of cake comes out clean. Set cake aside until it is it completely cool.
  3. Once cool take the cake out of the pan. Using a drinking class cut out round pieces of cake after wetting the edge of the glass with water. (This will make cutting the cake easier. You should get about 18 pieces.
  4. In a saucepan add the remaining ingredients (milk, flour, sugar, corn flour and egg yolk.) cook on low heat until it comes to the boil and the mixture becomes thicker.
  5. With one piece of round cake, add I tablespoon of pudding and sandwich between two pieces of chocolate cake. Make sure you add pudding around the cake and dip into coconut. Continue this with the remaining cake and decorate the top with chocolate sauce or Nutella and strawberries
