I was craving coconut and gritty sugar. These cookies are super easy and very yummy with a cuppa or an additional sweet treat for the lunch box or cookie jar filler.
Ingredients (makes 34 Cookies)
- 2 cups Self raising flour
- 1 cup White or raw sugar
- 1 cup Desiccated coconut
- 1/2 cup Chocolate chips
- 250 grams Butter melted
- Preheat oven to 180 and line 3 baking trays.
- Place all dry ingredients into a mixing bowl. Melt butter in saucepan or microwave and let cool slightly so as not to melt choc chips.
- Combine and put tablespoon scoops onto tray 2 cm apart. They don't spread, I fit 14 per tray. Bake for 15 to 20 minutes or until slightly golden.
