Nonnos Christmas Roast Turkey
Ingredients (serves 10)
- 1 (8kg) Turkey
- 1/2 cup Balsamic vinegar
- 1/2 cup Olive oil
- 1/4 cup Lemon juice
- 1/2 cup White wine
- 1 tablespoon Salt
- Dash Black pepper
- 1 spoon Fresh Oregano
- 1 cup Water
Method
- Mix balsamic vinegar , olive oil , lemon juice , salt, oregano and white wine in a bowl
- Pour it over the turkey and cover it in foil and leave in the fridge over night
- Preheat oven to 180 degrees Celsius the next day then pour one cup of water in the tray put turkey in oven. Let it cook for 2/12 hours slowly and keep basting turkey with its own juices from tray . When the chicken wings start to cook cover them with foil as they will burn. Turn turkey over and baste and cook for another hour. If juices are drying up then pour most of the juices in a bowl to retain it. The last hour remove outer foil but leave foil in wings and the fourth hour it should be ready but remember ever oven is different. When it's golden take out of oven and let it rest for 30-40 min then cut turkey and pour juices over the top of the turkey Breast . You will be licking your lips
