Ingredients (serves 4)

  • 1 litre milk
  • 1/3 cup coconut sugar
  • 1 teaspoon vanilla
  • 1/2 cup uncooked white rice
  • 1 cup shredded coconut

Method

  1. Combine all the ingredients (except the shredded coconut) in a saucepan.
  2. Simmer for 40 minutes or until the rice is tender. Take off the heat.
  3. Stir in the shredded coconut.
  4. Can be served warm or cold.

  • My youngest is on a diary free diet and I make regularly coconut creamed rice for her. I don’t use normal milk but simmer the rice in coconut milk then add only a spoon of coconut palm sugar, a spoon of shredded coconut and a teaspoon of cinnamon.
