This can be modified to fit any veg or protein you want to add in, and tastes great with natural greek yoghurt!


Ingredients (serves 6)

  • 1 cup shredded chicken (this time I used left over roast, no skin)
  • 1/2 cup steamed greens
  • 1 1/2 cups roast, diced pumpkin
  • 1 packet Ainsley Harriot Mushroom Cous Cous Mix

Method

  1. Make the Cous Cous according to directions.
  2. Add the other ingredients and mix.
  3. Serve into lunch sized portions and refrigerate.

  • Excellent. I love the whole-wheat cous cous for the extra nutrients that come from the whole grains of the flower and the added benefit for digestion and metabolic health.
