Delicious cookies? Look no further, these are perfect for after school treats.


Ingredients (makes 30 Cookies)

  • 1 1/2 cups Plain flour
  • 1 1/2 teaspoons Bicarbonate of soda
  • 1 cup Brown Sugar
  • 1/2 cup Shredded coconut
  • 1/2 cup Dried cranberries
  • 1/2 cup White choc bits
  • 150g Butter, chopped
  • 1 Egg, lightly beaten

Method

  1. Preheat oven to 180°C/160°C fan-forced. Line 2 large baking trays with baking paper.
  2. Melt butter in the microwave and set aside to cool.
  3. Sift the flour and bicarbonate soda into a large bowl. Add sugar, coconut, dried cranberries and chocolate.
  4. Add butter and egg to the bowl and stir to combine.
  5. Roll the mixture into balls and place on trays.
  6. Bake for 12-15 minutes or until golden brown

Notes

This was a Christmas treat, now we bake it year round. Its that good
