A very quick and easy soup!


Ingredients (serves 4)

  • 50 grams Butter
  • 50 grams Flour
  • 500 ml Chicken Stock
  • 500 ml Milk
  • 250 grams Mushrooms
  • Cream to serve

Method

  1. Put everything except the cream in a saucepan. Whisk continuously over moderate heat and bring to boil.
  2. Simmer for 20 minutes stirring or whisking frequently.
  3. Blend in food processor till smooth, be careful that it's not too hot! Add cream on top just before serving.

  • Simple easy and quick recipe, but a bit bland. I would at least add onion, garlic and spices. I often start with frying onion and garlic in butter / ghee and then add the mushroom, fold the flour in when the mushrooms are slightly browned, followed by the stock & milk, adding cream and spices later.
