This is a nice rich and creamy dish, great for winter


Ingredients (serves 2)

  • 2tbs Butter
  • 2 Diced chicken breasts
  • 1 Bunch of asparagus
  • 1 Leek
  • 1 Large brown onion
  • 1 Salt and pepper to taste
  • 2 Cups thickened cream
  • 1 cup Greek Yogurt
  • 1 tsp cumin
  • 1 tsp Coriander

Method

  1. In a heavy based saucepan fry diced onion and the diced chicken, add in the leek, asparagus and spices and fry until cooked
  2. Add in the cream and yogurt, and season with salt and pepper
  3. Transfer mix to a blender or food processor and blend until smooth.
  4. Return to the saucepan and heat, serve with a dollop of Greek yogurt

Notes... Serve with some tummy crisp sourdough bread
