A definite crowd pleaser !


Ingredients (serves 6)

  • 2 Tablespoons butter
  • 4 spring onions
  • 1 teaspoon curry powder
  • 440 gram tin Lobster bisque soup ( or cream of chicken )
  • 2 cups milk
  • 300 gram tin creamed corn
  • 1 tin corn kernels
  • 1 teaspoon lemon juice
  • 1 cup cream
  • 1/2 teaspoon minced chilli
  • 3/4 cup small prawns ( or a few large ones cut into pieces)

Method

  1. Heat butter , cook spring onions gently until soft and stir in curry powder. Cook for 30 seconds
  2. Add soup, milk and sweet corn and stir until well combined and simmering
  3. Season with salt and pepper. Add chicken stock, lemon juice, chilli and stir in cream and prawns
  4. Heat through gently until prawns are cooked Taste at this stage and adjust to taste ( you may want a little more lemon juice or chilli)

Notes

A lovely soup that is full of flavor and very easy to prepare. The lobster bisque soup can be substituted for cream of chicken if desired
