This crunchy muesli is packed full of tasty goodness making it the perfect breakfast or afternoon snack.


Ingredients (makes 10 bowls)

  • 1 cup Coconut Flakes
  • 1/2 cup Unsalted Mixed Nuts - chopped
  • 1/2 cup Rolled Oats
  • 1 tablespoon Chia Seeds
  • 2 tablespoons Sunflower Seeds
  • 1/4 cup Dried Cranberries
  • 2 tablespoons Coconut Oil
  • 1 tablespoon Honey

Method

  1. Preheat oven to 120C.
  2. Mix together all the dry ingredients in a big bowl except the cranberries.
  3. Melt coconut oil and honey together on the stove top or in the microwave then add to the dry ingredients and mix so that everything is coated.
  4. Line a baking tray and spread mixture across it evenly (you may need to use 2 trays).
  5. Cook for 10 mins then turn and cook for another 10 mins or until golden.
  6. Allow to cool, add cranberries then serve with yoghurt and fresh fruit.

Notes

To reduce the sweetness, simply omit the cranberries and replace the honey with butter.

  • This is a crunchy muesli that I could actually make. I buy the Coles-branded toasted muesli – I love everything in it — and I eat it every day. I don’t have many of the ingredients in this recipe, but could try it.

  • Interesting…have done this sort of combination without baking and adding honey….I can see that would make it very sweet and crunchy….and do I see almonds in the picture!? I would certainly add some. it would increase the protein which this week we’re meant to be getting in the mornings.


    • you sure do see almonds! they were in my nut mix and chopped them very roughly as I like my muesli quite chunky :)
