A delicious healthier version of curried sausages.


Ingredients (serves 6)

  • 900g Sausages
  • 60g Butter
  • 1/2 Onion, diced
  • 2 Cooking Apples, diced
  • 1 Zucchini, grated
  • 2 Carrots, grated
  • 2.5 Tsp Curry Powder
  • Pinch Mixed Herbs
  • Handful Raisins
  • 500 ml Chicken Stock (Salt Reduced)
  • 1/2 cup Water
  • 1 Tbsp Plain flour
  • 1/4 cup Extra Water

Method

  1. Cover sausages with water in a saucepan. Add a dash of vinegar. Cover and bring to the boil. Simmer gently for 10 minutes and drain.
  2. Melt butter in saucepan. Sauté onion, zucchini, carrot and apple for 5 minutes. Add curry powder, mixed herbs and raisins. Stir over heat for 3 minutes. Add water and chicken stock, bring to the boil.
  3. Meanwhile, peel and cut sausages. Put sausages into curry and simmer for 10 minutes. Blend flour and extra water together and add to curry, stirring until it boils and thickens.

Notes

*I serve with 1.5 cups (uncooked measurement) of rice. *Cooking time can be reduced if you use seperate saucepans for boiling the sausages and preparing the curry.

  • Good old curry sausages is such a good meal to fill hungry tummies and a good meal for camping and holidays when you want quick and easy and filling food for a crowd.

    • Fruit does give a curry recipe balance and I love fruit in curries for this reason.

  • My mil made tge best ever curried sausages. We didn’t eat sausages when I was a kid cos dad said it was ‘rubbish’ food with no nutritional value. I’m not a sausage fan but do enjoy them curried and with onion gravy. And I’ve found both recipes here on MoMs
