A quick and delicious vegan recipe.


Ingredients (serves 4)

  • 750g sweet potato
  • 2 cups water
  • 1 tablespoon oil
  • 1 onion
  • 1/2 teaspoon red curry paste
  • 2 tablespoons lemongrass
  • 1 cup coconut milk/cream

Method

  1. Boil sweet potato in water until tender, and mash in the pot.
  2. In a small saucepan, saute finely chopped onion in oil, along with red curry paste and finely chopped lemongrass.
  3. Add onion mixture to mashed sweet potato, pour in coconut milk and reheat but do not boil. Puree and serve with a garnish of coriander.
