Delicious, creamy and dairy free with no added sugar! You will love these ice-creams. So easy to make, you can prepare them the day before serving. The perfect dessert.


Ingredients (serves 8)

  • 250g fresh strawberries
  • 1/4 cup honey
  • 2 egg whites
  • 6 egg whites
  • 80g 70% dark chocolate (Green & Black 70% dark chocolate is dairy free)
  • 1/3 cup honey
  • 2 Tbsp almond milk

Method

  1. To prepare the strawberry ice-cream, blend or mash strawberries and place in a bowl with the honey and egg whites.
  2. Use an electric beater to beat all the ingredients together for 10 minutes or until stiff. Transfer to a container and place in the freezer. Freeze for 8 hours or prepare the day before serving.
  3. To prepare the chocolate ice-cream, beat egg whites until stiff.
  4. Melt chocolate. Add honey to the chocolate and stir until dissolved. Mix in milk. Gently fold chocolate mixture into the egg whites. Place in a container and freeze for 8 hours or prepare the day before serving.

  • This recipe as the ingedients are printed is NOT Dairy free.
    It has milk in it and no mention is made of using lactose free milk at all e.g. soy, rice, almond or other substitute milk.
    It states chocolate. A lot of chocolate has milk in it. I am not sure what is meant by 70% More details of the chocolate used needs to be given


    • Hi, yes I have written milk and it should read as almond milk, but I can’t work out how to edit the recipe now that it has been posted. I use 70% dark chocolate. Green & Black 70% dark chocolate is dairy free.

      • But Green & Black’s chocolate does contain sugar whilst you state no added sugar. It also has honey as ingredient. Honey is often considered a ‘natural’, healthier sweetener than sugar but nutritionally its true advantages are minor. While sugar is 100 per cent sucrose, honey is made up of around 75 per cent sugars, of which roughly half is glucose and half is fructose (these proportions may vary depending on the source of the nectar). The remaining 20 to 25 per cent is water with a trace of protein, a trace of fat and a trace of fibre, which explains why honey has fewer ‘sugars’ or kilojoules/calories than sugar when you compare them weight for weight. But still it does contain sugar !
