Make easy mini pies using puff pastry.


Ingredients (serves 6 | makes 6 pies)

  • 2 sheets frozen puff pastry, thawed
  • 1 egg, beaten
  • cream cheese, slice about 3x5cm if you use block cream cheese
  • strawberry jam (or your preferred jam)

Method

  1. Preheat oven to 200c. Line a baking sheet with baking paper.
  2. Cut each frozen puff pastry into 6 rectangles. (half of them are bottom, and other half will be top)
  3. Place each cream cheese and spoon about 1 tbsp of jam onto half of puff pastry piece.
  4. Place the top rectangles over the filling. Press down on the edges with a fork to seal.
  5. Brush the top of each pastry with egg wash. Bake for about 15-20 minutes or until tops are golden brown.
  6. Cool slightly and serve.

Notes

You can use any jam such as strawberry, blueberry, apple or raspberry.

  • Homemade apricot jam would be wonderful in these too. Homemade has a lot more flavour than mass produced. You can make the jam using about 3/4 the amount of sugar in its recipe so you get more of the actual fruit flavour and it’s healthier too.

  • Ooh, how quick and easy and yummy are these. I love the idea of different fillings and have so many ideas swirling around in my head right now – blueberry jam (yum), baked apple with cinnamon (yum)!!!
