Really easy to whip this up if having visitors. It's a lovey cross between a slice and a cake and goes perfect with a cuppa!


Ingredients (makes 1 Large slice)

  • 1 1/4 Cups SR Flour
  • 1 Cup Sugar
  • 1 Cup Desiccated coconut
  • 1 Cup Sultanas
  • 1/2 - 3/4 Cup Chopped dried apricots
  • 1 Cup Milk
  • 1/2 tsp Cinnamon
  • 1 tsp Vanilla extract

Method

  1. Mix all together until well combined.
  2. Pour into a lined slice tin and bake in a pre heated 180 degree oven for 35-40 minutes or until golden and skewer comes out clean. If it starts to brown too much on the top, cover loosley with foil for the remaining cooking time
  3. Allow to cool in the pan for 15 minutes before turning out onto a wire rack to finish cooling
